Halloween Traditions


What are your Halloween traditions? Fall brings thoughts of apple cider, caramel apples, chili, and hot soups. Our family favorites are broccoli cheese soup and homemade breadsticks, so I thought I'd share those recipes with you here today.

Broccoli Cheese Soup

4 quarts water

12 chicken bouillon cubes

1 large head of broccoli

2 cubes of butter

1 1/2 cups of flour

1/3 block of Velveeta

Bring water to boil in large stock pot while unwrapping bouillon cubes. Add them to the water as you unwrap. Cut up broccoli into bite size pieces and add to boiling water. Reduce heat and cook broccoli for 8 minutes, or until tender. In a separate saucepan, melt butter, then stir in flour until you have a thick whitesauce. Whisk this mixture into the water and broccoli, making sure there are no lumps of flour. Cut the Velveeta into small chunks and add them a few at a time, stirring constantly until they're all melted. Voila! (Can add salt and pepper if desired.)

Easy Breadsticks

3 cups of warm water

2 T. of yeast

6 cups of flour

4 T. of sugar

1 tsp. of salt

Garlic salt

Parmesan cheese

Put water, sugar and salt in a Bosch, other large mixer, or big bowl. Add flour then the yeast. Knead for 3 minutes. Add a cup or so of flour if dough is too sticky. Let the dough stand for 10 minutes. Heat the oven to 375 degrees. Melt 1/3 cube of butter on a cookie sheet. Or several cookie sheets. Roll the dough out on a floured counter to about an inch thick. Using a pizza cutter, cut the dough into strips a 1/2 inch wide. Roll the strips in the melted butter on the cookie sheet then lay them side by side. Sprinkle with garlic salt and Parmesan cheese. Let them rise for 30 minutes. Bake at 375 degrees for 15 - 20 minutes or until lightly brown. Enjoy!
